Pepper-Crusted Maple-Glazed Salmon
This high protein salmon features a sweet maple and soy marinade and a striking crust of fresh black pepper. For the most intense flavour, allow the fish to marinate for a full day before cooking. It bakes quickly in a hot oven, or can be finished on the grill for a smoky alternative. The recipe serves four people and takes just 17 minutes of active cooking time.
Ingredients
- 3/4 cup maple syrup
- 1/4 cup soy sauce
- 4 salmon fillets, skin removed
- 1/4 cup fresh ground black pepper
- 1/2 teaspoon olive oil
Method
- Combine the maple syrup and soy sauce in a mixing bowl.
- Submerge the salmon fillets in this mixture, ensuring they are fully covered, then refrigerate to marinate. Aim for at least four hours, though a full day is ideal.
- Heat your oven to 500 degrees F.
- Take a 10 by 10-inch piece of aluminium foil and lightly coat it with the olive oil.
- Spread the fresh ground black pepper onto a small plate.
- Take the salmon from the marinade and press just the top side into the pepper to create a crust.
- Arrange the fillets on the prepared foil with the peppered side facing upwards.
- Position the tray on the oven's top rack and bake for about 7 minutes.
- Note that the maple syrup may create some smoke during baking, which is normal.
- As an option, you can grill the salmon over hot coals for roughly 3 minutes on each side.
- Enjoy the salmon straight away.
