Pepper Chicken
This pepper chicken requires a marinade of 2-4 hours to develop its deep, aromatic flavours. Ingredients
- 1/2 cup butter
- 2 tablespoons fresh lemon juice
- 1 tablespoon freshly-ground pepper
- 1 tablespoon paprika
- 1 tablespoon dried basil, crumbled
- 1 tablespoon dried oregano, crumbled
- 3 garlic cloves, minced
- 2 bay leaves

- 1 teaspoon nutmeg

- 5 lbs chicken, cut into 8 pieces
Method
- In a large, heavy skillet, melt the butter. Stir in all the listed ingredients except for the chicken pieces and cook for about 5 minutes until the spices become fragrant, stirring now and then. Take the skillet off the heat and allow the mixture to cool.
- Place the chicken pieces into the cooled spice mixture, turning them to ensure they are fully coated. Cover the dish and refrigerate for 2-4 hours.
- With the cover on, cook the chicken until the juices from a pierced thigh run clear, which should take approximately 25 minutes.
