Pear, Nut & Blackberry Bircher
This Swiss-inspired Bircher muesli is a creamy overnight oat mixture perfect for a grab-and-go morning. Grated pear, rolled oats, cinnamon, and yogurt are combined in a jar, then topped with toasted macadamia nuts, blackberries, and pomegranate seeds. It requires just 12 minutes to prepare before chilling for at least 1 hr or overnight, making a refreshing Scandinavian-style breakfast or snack for one.
Ingredients
- 1 small ripe pear
- 4 tbsp rolled oats
- 1/4 tsp cinnamon
- 100g Greek yogurt or soya yogurt
- 4-6 macadamia nuts
- a small handful of blackberries
- a small handful of pomegranate seeds
Method
- Grate the entire small ripe pear, including its skin and pips, then transfer all the pulp and any collected juice into a small container or jam jar that has a secure lid.
- Mix in the rolled oats, 1/4 tsp cinnamon, and the 100g Greek or soya yogurt, stirring thoroughly. In a dry frying pan, toast the 4-6 macadamia nuts for 2 mins. Once toasted, chop them and scatter over the Bircher mixture along with a small handful of blackberries and pomegranate seeds. Refrigerate the jar for a minimum of 1 hr, or leave it overnight, prior to serving.
