This authentic Thai peanut satay sauce is wonderfully flavourful and packs a pleasant heat. The recipe combines red curry paste, coconut milk, and crunchy peanut butter, finished with fresh lime juice. It yields enough for 10 servings and can be prepared in just 25 minutes. Making a large batch is recommended as it stores very well in the freezer, offering a far superior alternative to shop-bought versions.

Peanut Satay Sauce

Ingredients

  • 1 tablespoon oil
  • 2 -3 teaspoons crushed dried chili pepper flakes
  • 1/2 cup finely sliced spring onion
  • 1 tablespoon red curry paste
  • 2 kaffir lime leaves, vein removed,chopped finely
  • 1 -1 1/2 cup coconut milk
  • 3/4 cup crunchy peanut butter
  • 2 tablespoons palm sugar (or white will do)
  • 1 lime, juice of

Method

  1. Warm the oil in a pan and gently fry the 2 -3 teaspoons of crushed dried chili pepper flakes.
  2. Cook the 1/2 cup of finely sliced spring onion, 1 tablespoon of red curry paste, and the chopped kaffir lime leaves until their aroma is released.
  3. Pour in 1 cup of the coconut milk, then add the 3/4 cup of crunchy peanut butter and 2 tablespoons of palm sugar, stirring to combine.
  4. Allow the mixture to reach a boil while stirring, then incorporate the juice from 1 lime.
  5. Adjust the thickness by mixing in the remaining 1/2 cup of coconut milk until your preferred consistency is achieved.
