Peach & Strawberry Punch, Nectarine Sunrise, Fruity Lemonade
Create a trio of colourful summer beverages to brighten any gathering. The first is a sparkling punch with strawberries, peaches and white wine. Next, a tequila based Nectarine Sunrise is blended into a slush. Finally, a fruity lemonade combines cherry lemonade with tropical juices and ginger ale. Each recipe yields eight servings and can be prepared in about 30 minutes.
Ingredients
- 1 cup strawberry, sliced
- 1 cup peach, chopped
- 2 tablespoons white sugar
- 750 ml sparkling white wine, chilled (asti *may substitute wine for apple juice)
- 1 quart water, sparkling,chilled
- 4 large mint sprigs
- 12 ice cubes
- 1 nectarine, pitted and sliced into 8 wedges
- 3 large nectarines, pitted and coarsley chopped
- 6 ounces frozen orange juice concentrate
- 2/3 cup tequila, silver
- 2 1/2 cups crushed ice (add more if necessary)
- 1/2 cup grenadine
- 8 sprigs mint
- 6 ounces frozen cherry lemonade concentrate
- 6 ounces water, cold
- 12 ounces apricot nectar, chilled
- 12 ounces pineapple juice, chilled
- 12 ounces ginger ale, spicy,chilled
- 1/2 cup light rum or 1/2 cup vodka (optional)
- 12 ice cubes
- 8 pineapple chunks, fresh
- 8 lime slices, fresh
- 8 maraschino cherries
- 8 skewers, plastic,small (may substitute toothpicks)
Method
- For the Peach & Strawberry Punch, place the sliced strawberries and chopped peaches into a small bowl.
- Scatter the sugar over the fruit and mix it in carefully.
- Let the fruit mixture sit out for 30 minutes to an hour.
- Transfer the fruit to a chilled punch bowl, then pour in the wine and water. Add the mint sprigs and ice cubes.
- For the Nectarine Sunrise, set aside eight nectarine slices for later.
- Put the chopped nectarines, orange juice concentrate and tequila into a blender and process until smooth.
- Blend in the crushed ice until the mixture has a slushy texture.
- Pour 1 tbsp of grenadine into the bottom of each serving glass.
- Carefully spoon the nectarine slush mixture over the grenadine.
- Finish each glass with a mint sprig and a reserved nectarine slice.
- For the Fruity Lemonade, combine the cherry lemonade concentrate, 6 ounces of water, apricot nectar and pineapple juice in a large pitcher.
- If using, add the rum or vodka now. Place the ice cubes in the pitcher, then slowly pour in the ginger ale and give it a gentle stir.
- To make the garnish, thread a pineapple chunk, a lime slice and a maraschino cherry onto a small plastic skewer.
- Serve the drinks immediately.
