Patacones de Colombia (Fried Plantains)
Patacones are a beloved Latin American snack or side dish featuring ripe plantain. The slices are first fried until slightly golden, then smashed flat and fried a second time until crisp and browned. The process creates a delicious contrast between a crunchy exterior and a tender interior. Finished with a sprinkle of salt, they are a quick and satisfying treat. This method uses minimal ingredients and is completed in about 20 minutes.
Ingredients
- 0.5 cup oil for frying
- 1 ripe plantain, peeled and cut into 1-inch rounds
- 1 pinch salt
Method
- Turn a plate upside down and position it on your work surface.
- Pour oil into a large skillet and warm it. Gently add the plantain rounds to the oil. Cook for 2 to 3 minutes on each side until they begin to colour. Remove them with a slotted spoon onto the inverted plate, keeping the oil in the pan. Place another plate on top of the plantains and press down to flatten them.
- Carefully return the flattened plantains to the hot oil. Fry for another 2 to 3 minutes per side until they are browned. Move them to a plate lined with paper towels to drain, then season with a pinch of salt.
