Parsnip mash with apple
This British side dish combines parsnips and Bramley apples for a subtly sweet and creamy mash. The vegetables are simmered until tender, then blended with butter, warm spices and milk to create a smooth purée. It's a comforting accompaniment, ideal for serving alongside pork chops or sausages at a dinner or supper. The recipe takes just 27 minutes to prepare for four people.
Ingredients
- 850g parsnip peeled and cut into small chunks
- 2 Bramley apples peeled, cored and quartered
- 50g butter plus a little extra to serve
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 100ml milk
Method
- Simmer the parsnip and apple chunks in salted water for 10 mins until they are soft, then drain them. Return the empty pan to the heat, melt the butter with the spices, then pour in the milk and heat it gently.
- Combine this spiced milk mixture with the cooked parsnip and apple. Season thoroughly, then process in a food processor to a smooth consistency, or mash manually. Transfer to a serving bowl and finish with a drizzle of melted butter.
