Parmesan Pepper Rice Pilaf

Ingredients

  • 1 cup converted rice, uncooked (such as Uncle Ben's)
  • 1 (14 ounce) can chicken broth
  • 1 tablespoon olive oil
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup grated parmesan cheese
  • fresh ground black pepper

Method

  1. Warm the olive oil in a medium saucepan.
  2. Introduce the crushed red pepper and the uncooked rice to the pan.
  3. Mix thoroughly to ensure the rice is coated in the oil.
  4. Continue cooking for a minute or two until the grains begin to turn translucent.
  5. Pour in the chicken broth and allow the mixture to reach a boil.
  6. Lower the heat, place a lid on the pan, and let it simmer for 20 minutes or until the broth is fully absorbed.
  7. Take off the lid and use a fork to fluff the cooked rice.
  8. Add the grated Parmesan cheese and a seasoning of fresh ground black pepper.
  9. Replace the cover briefly to allow the cheese to melt.
  10. The pilaf is now ready to be served.
