These inventive breakfast tacos use soft pancakes as a base, filled with classic brunch ingredients. Crispy streaky bacon bakes in the oven while you prepare a simple pancake batter and a spiced maple butter. Pancake breakfast tacos

Ingredients

  • 100g streaky bacon
  • 125g self-raising flour
  • 1 tsp baking powder
  • 10g golden caster sugar
  • 15g butter melted
  • 1 tsp vanilla extract
  • 125ml milk
  • 3 egg
  • 1/2 tbsp neutral-tasting oil
  • 2g chives finely chopped
  • 30g mature cheddar grated
  • 60g butter softened
  • 1 tbsp maple syrup
  • pinch of ground cinnamon
  • 2 eggs
  • 1 tbsp butter

Method

  1. Set your oven to 200C/180C fan/gas 6. Place the bacon on a baking tray in one layer. Bake for 12-14 mins until it is crisp. In a separate bowl, mix the self-raising flour, baking powder and sugar. In a jug, whisk together the melted butter, vanilla extract, milk and one egg. Create a hollow in the dry ingredients, pour in the wet mix and whisk to combine. A few lumps are acceptable.
  2. Warm a small amount of the oil in a non-stick pan. Add 2 tbsp of batter and shape it into a 12cm circle. Cook for 2-3 mins until the edges are golden and set. Turn it over and cook for another 1-2 mins until set. Make four pancakes this way, keeping cooked ones warm in the oven.
  3. For the maple butter, beat the softened butter, maple syrup and ground cinnamon until smooth. To scramble the eggs, whisk two eggs with salt. Melt 1 tbsp butter in a frying pan. When it foams, pour in the eggs. Leave for 20 seconds, then stir and cook for 1-2 mins more until set and fluffy. Avoid over-stirring.
  4. Spread the maple butter onto the warm pancakes. Add the scrambled eggs, followed by the crisp bacon, chopped chives and grated cheddar.
