This is a cherished family method for preparing potatoes, yielding soft and tender results rather than crispy hash browns. Sliced potatoes and onions are fried in bacon fat with paprika until perfectly cooked. The dish is ideal alongside smoked sausage or kielbasa and serves 4 to 6 people. The entire process takes about 25 minutes to complete.

Pan-fried Potatoes

Ingredients

  • 5 -6 potatoes, sliced (peel-on optional)
  • 1 large onion, sliced
  • 2 tablespoons bacon fat
  • 1 -2 tablespoon paprika
  • salt

Method

  1. Melt the bacon fat in a skillet.
  2. Cook the sliced onions for 2-3 minutes.
  3. Introduce the potatoes, salt, and paprika, using enough paprika to give the potatoes a near-orange hue.
  4. Place a lid on the skillet and fry the contents until the potatoes become soft and tender.
  5. Should the mixture begin to stick and form a crust, reduce the heat and pour in a small amount of water.
