Pan Fried Daikon Cake
This recipe highlights the sweet and slightly sharp flavour of daikon radish in a crispy, pan fried cake. The grated radish is salted and drained before being combined with onion, breadcrumbs, egg and seasonings. The mixture is shaped into patties and fried in vegetable oil until firm and golden brown. It makes a delicious Asian inspired appetiser or snack, ready to serve in under an hour.
Ingredients
- 1.5 cups grated daikon radish
- 2 teaspoons salt
- 0.5 red onion, chopped
- 0.5 cup Italian seasoned bread crumbs
- 1 egg, beaten
- 1 clove garlic, minced
- 0.5 teaspoon ground black pepper
- 0.5 teaspoon paprika
- 0.5 teaspoon chile-garlic sauce (such as Sriracha®)
- 1.5 cups vegetable oil for frying
Method
- Put the grated daikon into a large bowl and sprinkle it with the 2 teaspoons of salt. Place this in the refrigerator for 30 minutes. Afterwards, drain the daikon and move it to a clean bowl.
- Mix the chopped red onion, Italian seasoned bread crumbs, beaten egg, minced garlic, 0.5 teaspoon of black pepper, 0.5 teaspoon of paprika, and 0.5 teaspoon of chile-garlic sauce into the daikon. Combine everything thoroughly. Shape the mixture into 8 individual patties.
- Pour the 1.5 cups of vegetable oil into a large skillet and heat it. Place the patties in the hot oil and fry them until they are firm and have a good brown colour, which takes about 3 minutes for each side. Transfer the cooked cakes to paper towels to drain.
