Oven-Fried Fish
This recipe offers a lighter take on fried fish by using the broiler. Catfish or trout fillets are brushed with butter, dusted with flour, and broiled until they start to brown. A tangy sauce made with lemon juice, Worcestershire, and parsley is then poured over before a final broil until the fish flakes perfectly. It's a straightforward method for a satisfying main course.
Ingredients
- 1 1/2-2 lbs catfish fillets (4 fillets) or 1 1/2-2 lbs trout fillets (4 fillets)
- 6 tablespoons butter or 6 tablespoons margarine, melted and divided
- 1 tablespoon all-purpose flour
- 1 dash paprika (optional)
- 3 tablespoons lemon juice
- 1 tablespoon parsley
- 2 teaspoons Worcestershire sauce
Method
- Arrange the fish fillets on a broiler rack that you have sprayed with non-stick cooking spray.
- Use 3 tablespoons of the melted butter or margarine to brush over the tops of the fish.
- Lightly dust the buttered fish with the all-purpose flour.
- If you like, add a dash of paprika over the fish.
- Position the rack 5-6 inches from the heat source and broil the fish for 5 minutes, or until it just begins to turn golden.
- Mix together the lemon juice, parsley, Worcestershire sauce and the rest of the melted butter, then pour this mixture over the fish.
- Return the fish to the broiler and cook for another 5 minutes, or until it flakes easily when tested with a fork.
