Orange Crusted Fish
This dish features white fish fillets coated in a vibrant crust made from breadcrumbs, fresh parsley, orange zest, and chopped red chilli. The fish is lightly sprayed with oil before the crumb mixture is pressed on top, then baked until perfectly cooked. It's a quick and flavourful option that brings together citrus and spice in a simple preparation.
Ingredients
- 3 slices bread
- 1/4 cup fresh parsley, chopped
- 1 orange, grated rind only
- 1 red chile, seeded and finely chopped
- 4 boneless white fish fillets

Method
- Set your oven to heat to 200 degree C.
- Use a blender or food processor to turn the bread slices into fine crumbs.
- Put the crumbs in a bowl and mix through the chopped parsley, grated orange rind and finely chopped chilli.
- Add salt and pepper to the mixture for seasoning.
- Lightly coat the fish fillets with cooking spray.
- Arrange the fillets in a baking dish and firmly pat the prepared crumb mix onto each one.
- Give the topped fish another light spray with oil.
- Bake for 10 to 15 minutes until the fish is cooked through.
