This recipe simplifies the classic English breakfast by cooking everything in one pan, requiring no chopping. It features chipolatas, bacon, mushrooms, eggs and cherry tomatoes, all cooked together and finished under the grill. The optional cheese and chives add a final flourish. Ingredients

  • 4 good-quality pork chipolatas
  • 4 rashers smoked back bacon
  • 140g button mushroom
  • 6 eggs beaten
  • 8 cherry tomatoes halved
  • handful grated cheese (optional)
  • 1 tbsp snipped chives

Method

  1. Set your grill to high. Place a medium non-stick frying pan on the heat, add the chipolatas and cook them for 3 mins.
  2. Add the bacon to the pan, turning it now and then, and cook until it begins to crisp, which should take about 5 mins more.
  3. Tip the mushrooms into the pan and carry on cooking for a further 3-5 mins. Pour off any extra fat and arrange the ingredients evenly across the pan.
  4. Season the beaten eggs, then pour them into the pan, swirling to fill any gaps. Gently stir the eggs with a fork for 2 mins over a low-medium heat as they start to set.
  5. Scatter the halved tomatoes, the grated cheese if you are using it, and the snipped chives over the top. Place the pan under the grill for 2 mins until the eggs are fully set.
  6. Slice the cooked breakfast into wedges and serve it with your preferred sauces.
