Omuraisu (Japanese Rice Omelette)
Omuraisu is a popular Japanese comfort food featuring a seasoned fried rice base, often made with ham and ketchup, which is then enveloped in a soft egg omelette. The dish is finished with a final drizzle of ketchup and a sprinkle of fresh herbs. It's a quick and satisfying meal, ideal for a speedy breakfast or a simple lunch. This version uses readily available ingredients and comes together in about 20 minutes for a single serving.
Ingredients
- 1 cup cooked white or brown rice
- 2 thin slices cooked ham, cubed
- 2 tablespoons ketchup
- 1 slice processed cheese food (such as Velveeta ®)
- 2 eggs
- salt and pepper to taste
- 0.25 teaspoon chopped fresh parsley
Method
- Warm a skillet and coat it with cooking spray. Combine the cooked rice, cubed ham, 2 tablespoons of ketchup, and the cheese slice. Cook while stirring for about 8 minutes until everything is hot and well mixed. Move the mixture to a bowl and mould it into an oval shape.
- Whisk the eggs with salt and pepper in a separate bowl. Heat a small skillet with cooking spray. Pour in the egg mixture and cook until it begins to set. Lift the edges to allow any liquid egg to flow underneath. Carefully fold the eggs with a spatula to create a cocoon shape. Take it off the heat once the eggs are fully set.
- Position the cooked omelette over the shaped rice. Use a knife to make a lengthwise cut through the top of the omelette, opening it to drape over the rice like butterfly wings. Finish with the remaining 1 tablespoon of ketchup and a sprinkle of chopped parsley.
