Old-Fashioned Vanilla Ice Cream
This recipe creates a rich and creamy vanilla ice cream using a traditional custard base. The process involves tempering egg yolks with a warm cream mixture, cooking it to a thick consistency, and then thoroughly chilling the custard before churning. The result is a smooth, flavourful homemade ice cream with a classic taste. The method requires an ice cream maker to achieve the perfect frozen texture.
Ingredients
- 3 egg yolks
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup sugar or 3/4 cup Splenda sugar substitute
- 1 1/2 teaspoons vanilla extract
- 1/8 teaspoon salt
Method
- Whisk the egg yolks in a large mixing bowl.
- Place the cream, milk, and sugar in a saucepan and warm it until steaming, which should take roughly 4 minutes. Gradually mix about half a cup of the warm liquid into the yolks, then combine this yolk mixture back into the saucepan.
- Continue to cook the custard, stirring now and then, until it thickens sufficiently, about 3 minutes. Stir in the vanilla extract and salt. It is ready when you can draw a line on the back of a coated spoon.
- Transfer the custard to a bowl and set it in an ice bath to cool for 8 minutes. Take the bowl out, cover it with cling film, and refrigerate the mixture for a minimum of 4 hours or leave it overnight.
- Pour the chilled custard into your ice cream machine and churn it following the appliance's specific guidelines.
