Noisette Potatoes
These British noisette potatoes deliver a delicious combination of sautéed and roasted flavours. The method involves shaping peeled potatoes into balls, pan-frying them until golden, and then finishing them in the oven. A final toss with butter and seasoning creates a simple yet impressive side dish that serves eight. The total preparation and cooking time is around 60 minutes.
Ingredients
- 16large potatoes peeled and washed
- cooking oil
- knob of butter
Method
- Set your oven to 200C/Gas 6/fan oven 180C. Shape the peeled potatoes into balls, ensuring you rinse them thoroughly after cutting. Pat the potato balls completely dry using a clean tea towel before you begin cooking.
- Place 2 tablespoons of cooking oil in a large frying pan. Cook 2-3 handfuls of the potato balls until they achieve a golden brown colour, then move them to a roasting tray. Continue this process with the remaining potatoes. Finally, roast them in the oven for 15-20 minutes until tender.
- Take the roasting tray from the oven once the potatoes are done. Add a knob of butter and season with salt and pepper, tossing to coat. Your noisette potatoes are now prepared for serving.
