New Potatoes With Lemon Butter
This recipe transforms tiny new potatoes into a flavourful side. The potatoes are boiled until tender, then tossed in a vibrant sauce of melted butter, fresh lemon juice, and aromatic chives. Ingredients
- 3 lbs tiny new potatoes
- 3/4 teaspoon salt
- 1/2 cup butter
- 3 tablespoons lemon juice
- 2 tablespoons parsley or 1 tablespoon dried chives
Method
- Scrub the new potatoes clean.
- Remove a thin strip of skin, roughly 1/2" wide, from around the middle of each potato.
- Place the potatoes in a pan and add boiling water until it reaches a depth of 2 inches, then mix in 1/2 tsp salt.
- Heat the pan until the water returns to a boil.
- Put a lid on the pan and let the potatoes boil gently for approximately 20 minutes or until they become tender.
- Pour away all the cooking water.
- Place the pan back on the heat briefly so the potatoes dry out.
- In a separate container, melt the butter.
- Combine the lemon juice, chives, and 1/4 teaspoons salt with the melted butter.
- Drizzle the lemon butter over the potatoes and gently turn them to ensure an even coating.
