My Favourite Tomato Salad
This classic Italian side salad is a must-know recipe. Instead of a separate dressing, garlic, shallots, and salt are sprinkled directly onto juicy tomato wedges, allowing the flavours to cling perfectly. Everyday red tomatoes work wonderfully, though heirloom varieties can add vibrant colour. It comes together in just 10 minutes for a fresh, vibrant accompaniment to any meal.
Ingredients
- 4 ripe tomatoes ((180g/ 6oz each) (Note 1))
- 1 1/2 tsp finely minced eschalots ((US: shallots) (Note 2))
- 1/2 tsp finely minced garlic ((use a knife, not garlic press))
- 1 tbsp white wine vinegar ((Note 3))
- 3 tbsp extra virgin olive oil
- 3/4 tsp cooking / kosher salt
- 2 pinches white pepper
- 1 1/2 tbsp finely sliced basil leaves (, plus extra for garnish (Note 4))
Method
- Slice the tomatoes into 8 or 10 wedges each, removing the core. Transfer them to a large mixing bowl.
- Scatter the minced eschallots, garlic, salt, and white pepper over the tomatoes. Pour the olive oil and white wine vinegar on top.
- Toss the ingredients gently to coat the tomato wedges. Add the sliced basil leaves and toss once more to distribute them evenly.
- Transfer the salad to a serving bowl and enjoy straight away. A tip: serving it with bread to soak up the delicious juices is highly recommended.
