Music Parents Famous Frito Pie
This crowd-pleasing recipe was created for local festival sales and became an instant favourite, especially with children. It features a hearty mixture of browned ground beef, onions and garlic simmered with tomatoes, spices and Worcestershire sauce. Red kidney beans are added to create a thick, flavourful chilli that is served over Fritos corn chips and finished with grated cheddar cheese. The entire dish is ready in about 105 minutes and yields enough for 4 to 6 people.
Ingredients
- 1 lb ground beef
- 1 large onion, chopped
- 2 garlic cloves, chopped
- 1 (16 ounce) can crushed tomatoes with juice
- 3 tablespoons chili powder
- 2 teaspoons salt
- 1 tablespoon sugar
- 1 tablespoon Worcestershire sauce
- 1 (15 ounce) can red kidney beans (do not drain)
- Fritos corn chips
- grated cheddar cheese
Method
- Cook the ground beef with the chopped onion and garlic until browned.
- Remove any extra fat from the pan by draining it.
- Stir in the can of crushed tomatoes with its juice, along with the chili powder, sugar, salt and Worcestershire sauce.
- Place a lid on the pan and let the mixture cook gently for 1 hour.
- Pour in the entire can of red kidney beans, including the liquid.
- Cook without a lid for 15 minutes or until the mixture reaches a thick consistency.
- Spoon the finished chilli over a bed of Fritos corn chips, rice, or use it as a topping for hot dogs.
- Finish the dish by sprinkling grated cheddar cheese over the top.
