Mushroom Bok Choy Soup

Ingredients

  • 0.25 cup unsalted butter
  • 1 pound white and crimini mushrooms, cut into quarters
  • 1 head bok choy, chopped
  • 4 green onions, sliced
  • 2 tablespoons minced garlic, or more to taste
  • 8 slices fresh ginger, quartered
  • 0.25 cup lime juice
  • 7 cups chicken broth
  • 0.5 cup chopped fresh cilantro

Method

  1. Prepare all the required ingredients.
  2. Melt the butter in a stockpot. Introduce the mushrooms, bok choy, green onions, garlic, and ginger. Drizzle the lime juice over the mixture and cook, stirring, until it begins to brown lightly, 2 to 3 minutes.
  3. Turn the heat up to medium-high. Add the chicken broth and allow it to reach a boil. Lower the heat and let the soup simmer until the vegetables have softened, about 5 minutes.
  4. Serve the soup in bowls, topping each portion with fresh cilantro and the reserved green bok choy leaves.
