Mushroom Bok Choy Soup
This flavoursome Asian soup is both light and nourishing. It combines mushrooms and bok choy with a healthy dose of fresh ginger and garlic, finished with lime and cilantro. Ingredients
- 0.25 cup unsalted butter
- 1 pound white and crimini mushrooms, cut into quarters
- 1 head bok choy, chopped
- 4 green onions, sliced
- 2 tablespoons minced garlic, or more to taste
- 8 slices fresh ginger, quartered
- 0.25 cup lime juice
- 7 cups chicken broth
- 0.5 cup chopped fresh cilantro
Method
- Prepare all the required ingredients.
- Melt the butter in a stockpot. Introduce the mushrooms, bok choy, green onions, garlic, and ginger. Drizzle the lime juice over the mixture and cook, stirring, until it begins to brown lightly, 2 to 3 minutes.
