Mushroom Almond Pate
This vegetarian pate combines toasted slivered almonds with sauteed mushrooms, onion, garlic and herbs for a rich, creamy spread. The almonds are toasted until golden, then blended with olive oil to create a smooth base. The cooked mushroom mixture is incorporated before serving, finished with a topping of chopped toasted almonds for texture. It's a quick recipe, ideal for a speedy starter or snack.
Ingredients
- 1 cup slivered almonds
- 4 tablespoons butter
- 3/4 lb mushroom, sliced
- 1 small onion, sliced thin
- 1 garlic clove, pressed
- salt
- 1/4 teaspoon thyme
- 1/8 teaspoon pepper
- 2 tablespoons olive oil
Method
- Toast the slivered almonds and allow them to cool completely.
- Melt the butter in a pan, then add the sliced mushrooms, thin onion slices, pressed garlic, salt, 1/4 teaspoon thyme and 1/8 teaspoon pepper. Cook until the mushrooms have softened.
- Keep 2 tablespoons of the toasted almonds aside. Blend the remaining almonds, pouring in the 2 tablespoons of olive oil while the blender runs. Continue until the mixture is creamy and smooth.
- Add the cooked mushroom mixture to the blender and blend again to combine.
- Transfer the blended pate into a bowl suitable for serving.
- Chop the 2 tablespoons of reserved almonds and sprinkle them over the top of the pate before serving.
