Moroccan Spiced Carrots

Ingredients
- 500g carrot halved and cut into thin rounds
- 2 tbsp extra-virgin olive oil
- harissa paste
- 1 tbsp lemon juice
- handful chopped coriander plus extra
Method
- Steam the carrot rounds in a steamer over boiling water for 7-10 mins until they are just tender. Combine the olive oil, harissa paste, and lemon juice in a separate bowl. Toss the warm carrots in this prepared dressing.
