Mongo Guisado is a classic Filipino soup featuring mung beans simmered until tender. The beans are mashed and combined with a savoury base of sautéed pork, prawns, onion, garlic and tomato in chicken broth. Fresh spinach is stirred in at the end for a nutritious finish. This substantial dish is ready in about 80 minutes and serves six people perfectly.

Mongo Guisado (Mung Bean Soup)

Ingredients

  • 2 cups water
  • 0.5 pound raw mung beans
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 0.25 pound boneless pork loin, cut into 1-inch cubes
  • salt and ground black pepper to taste
  • 0.25 pound peeled and deveined prawns
  • 1 small tomato, diced
  • 3 cups chicken broth, or more as needed
  • 0.5 pound fresh spinach leaves

Method

  1. Place the water and mung beans in a pot and bring to a boil. Continue boiling until the beans become soft, about 40 minutes. Mash the softened beans and set them aside.
  2. Warm the olive oil in a large pot. Cook the chopped onion and minced garlic, stirring, until they soften, 5 to 7 minutes. Add the pork cubes, season with salt and pepper, and cook for 3 minutes. Carefully mix in the prawns and cook for 2 minutes. Stir in the diced tomato and cook for a further 3 minutes. Lower the heat, pour in the chicken broth and let it simmer for 5 minutes.
  3. Mix the mashed beans into the pot. Cook for 5 minutes, stirring often to stop the soup sticking. Add extra chicken broth or water if the consistency is too thick. Fold the fresh spinach leaves into the soup and cook for 2 minutes more. Serve immediately while hot.
