Mixed Bean Goulash
This vegetarian Eastern European goulash is a simple yet satisfying main course. It uses just five key ingredients, including smoked paprika for a deep flavour and canned mixed beans for protein. The dish comes together in a single pan in about 25 minutes, making it a perfect quick dinner or supper option. Serve it warm with your choice of accompaniments for a complete meal.
Ingredients
- 2 tbsp olive oil
- 1 large onion finely chopped
- 1 tbsp smoked paprika
- 400g can chopped tomato with garlic
- 400g can mixed bean drained and rinsed
Method
- Warm the olive oil in a large saucepan. Cook the finely chopped onion for 5 mins until it starts to soften.
- Stir in the smoked paprika and cook for a further min.
- Add the can of chopped tomatoes with garlic along with half a can of water. Let it simmer gently for 10 mins until the sauce thickens and looks glossy.
- Pour in the drained and rinsed mixed beans. Continue cooking for 2 mins to ensure the beans are heated through.
- Ladle the goulash into bowls and serve immediately.
