This recipe guides you through creating a homemade mayonnaise flavoured with fresh mint. Minted Mayonnaise

Ingredients

  • 2 egg yolks
  • 1/2 lemon, juice of
  • 1 teaspoon hot English mustard
  • white pepper
  • minted olive oil
  • 1 cup extra virgin olive oil
  • 1 cup tightly packed mint leaf

Method

  1. Put the egg yolks into a bowl and whisk them together with the lemon juice, mustard and a pinch of salt.
  2. Keep whisking constantly while you drizzle in the minted oil one tablespoon at a time, continuing until all the oil is added and the texture is creamy.
  3. Follow these steps to prepare the minted olive oil.
  4. Warm the oil gradually in a pan until it reaches a temperature of 70-80d.
  5. Without a thermometer, ensure the oil does not boil. it is preferable for it to be cooler rather than too hot.
  6. Transfer the mint leaves to a heatproof bowl, pour the warmed oil over them, stir thoroughly and let it cool down.
  7. Pour the oil through a strainer into a jar and remove the used mint leaves.
