Minted Mayonnaise
This recipe guides you through creating a homemade mayonnaise flavoured with fresh mint. Ingredients
- 2 egg yolks
- 1/2 lemon, juice of
- 1 teaspoon hot English mustard
- white pepper
- minted olive oil
- 1 cup extra virgin olive oil
- 1 cup tightly packed mint leaf
Method
- Put the egg yolks into a bowl and whisk them together with the lemon juice, mustard and a pinch of salt.
- Keep whisking constantly while you drizzle in the minted oil one tablespoon at a time, continuing until all the oil is added and the texture is creamy.
- Follow these steps to prepare the minted olive oil.
- Warm the oil gradually in a pan until it reaches a temperature of 70-80d.
- Without a thermometer, ensure the oil does not boil. it is preferable for it to be cooler rather than too hot.
- Transfer the mint leaves to a heatproof bowl, pour the warmed oil over them, stir thoroughly and let it cool down.
- Pour the oil through a strainer into a jar and remove the used mint leaves.
