Mint Relish and Raita

This recipe creates two distinct Indian condiments from one simple base. A fresh, spicy mint and coriander relish is blended with yoghurt, then a portion is mixed with more yoghurt to form a cooling raita. Both are ideal for serving with poppadums as a quick and flavourful starter or accompaniment. The recipe yields enough for six people.

Mint Relish and Raita

Ingredients

  • 50g mint leaves
  • 2 x 20g packs coriander
  • 2 fresh green chillies deseeded
  • 1/2 tsp salt
  • 2 tsp caster sugar
  • 2 tbsp lemon juice
  • 2 x 150ml pots natural yogurt
  • poppadums to serve

Method

  1. Place the mint, coriander, green chillies, 1/2 tsp salt, 2 tsp caster sugar, 2 tbsp lemon juice, 1 tbsp water and 2 tbsp of the yoghurt into a food processor. Blend thoroughly until you have a smooth green paste, then transfer it to a bowl.
  2. Remove 4 tbsp of the green paste and combine it with the remaining yoghurt to create the raita. Cover both the relish and the raita and refrigerate them overnight.
