Mini Waffle Pops with Dark Chocolate, Peanuts, and Salt
These delightful mini waffle pops are a playful and festive treat, ideal for breakfast or dessert. Each bite-sized waffle on a lollipop stick is dipped in dark chocolate and finished with a sprinkle of chopped roasted peanuts and a touch of flaked sea salt. The recipe yields 60 individual pops, ready in just 27 minutes, making them a charming option for parties or special gatherings.
Ingredients
- cooking spray
- 1.75 cups all-purpose flour
- 3 tablespoons white sugar
- 1 tablespoon baking powder
- 0.5 teaspoon salt
- 1.5 cups milk
- 3 eggs, beaten
- 0.5 cup butter, melted
- 1 teaspoon vanilla extract
- 1 (12 ounce) bag dark chocolate chips
- 60 lollipop sticks
- 0.5 cup chopped roasted peanuts
- 1 tablespoon flaked sea salt
Method
- Apply cooking spray to a waffle iron and preheat it following the manufacturer's guidelines.
- Combine the all-purpose flour, white sugar, baking powder, and 1/2 teaspoon salt in a large mixing bowl with a whisk.
- In another bowl, whisk together the milk, beaten eggs, melted butter, and vanilla extract. Pour this liquid mixture into the dry ingredients and stir just until the batter is moistened.
- For each pop, place 2 teaspoons of batter onto the preheated waffle iron, spacing them apart. Push a lollipop stick about 3/4 of the way into each portion of batter. Close the lid and cook until golden and crispy, for about 1 minute. Move each finished waffle pop to a cooling rack and repeat with the rest of the batter and sticks.
- Place the dark chocolate chips in a microwave-safe bowl. Heat in the microwave in 15-second intervals, stirring between each, for 1 to 3 minutes until melted.
- Transfer the melted chocolate to a pastry bag fitted with a small tip or to a resealable plastic bag with one corner cut off. Drizzle the chocolate over one side of each cooled waffle pop.
- While the chocolate is still soft, scatter the chopped roasted peanuts and a small pinch of flaked salt over each pop. Allow them to set until the chocolate hardens, for about 5 minutes.
