Mini Waffle Pops with Dark Chocolate, Peanuts, and Salt

Ingredients

  • cooking spray
  • 1.75 cups all-purpose flour
  • 3 tablespoons white sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1.5 cups milk
  • 3 eggs, beaten
  • 0.5 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 (12 ounce) bag dark chocolate chips
  • 60 lollipop sticks
  • 0.5 cup chopped roasted peanuts
  • 1 tablespoon flaked sea salt

Method

  1. Apply cooking spray to a waffle iron and preheat it following the manufacturer's guidelines.
  2. Combine the all-purpose flour, white sugar, baking powder, and 1/2 teaspoon salt in a large mixing bowl with a whisk.
  3. In another bowl, whisk together the milk, beaten eggs, melted butter, and vanilla extract. Pour this liquid mixture into the dry ingredients and stir just until the batter is moistened.
  4. For each pop, place 2 teaspoons of batter onto the preheated waffle iron, spacing them apart. Push a lollipop stick about 3/4 of the way into each portion of batter. Close the lid and cook until golden and crispy, for about 1 minute. Move each finished waffle pop to a cooling rack and repeat with the rest of the batter and sticks.
  5. Place the dark chocolate chips in a microwave-safe bowl. Heat in the microwave in 15-second intervals, stirring between each, for 1 to 3 minutes until melted.
  6. Transfer the melted chocolate to a pastry bag fitted with a small tip or to a resealable plastic bag with one corner cut off. Drizzle the chocolate over one side of each cooled waffle pop.
  7. While the chocolate is still soft, scatter the chopped roasted peanuts and a small pinch of flaked salt over each pop. Allow them to set until the chocolate hardens, for about 5 minutes.
