Mini Chicken Schnitzels with Garlic Sauce

These bite-sized schnitzels are made from chicken thigh fillets, coated in seasoned flour, egg and breadcrumbs, then baked until crisp. They are accompanied by a simple sauce of butter, garlic and crème fraîche, finished with fresh parsley. This dish is perfect for a casual supper and can be served with optional skinny fries and salad leaves. It serves four people and takes just 30 minutes to prepare and cook.

Mini Chicken Schnitzels with Garlic Sauce

Ingredients

  • 500g skinless, boneless chicken thigh fillets
  • 4 tbsp plain flour
  • 2 eggs beaten
  • 140g dried breadcrumbs
  • 75g butter
  • 4 fat garlic cloves finely chopped
  • 200g crème fraîche
  • 1/2 small bunch curly parsley finely chopped
  • mixed leaf (optional), to serve
  • skinny fries (optional), to serve

Method

  1. Preheat the oven to 220C/200C fan/gas 7. Sandwich the chicken thigh fillets between two sheets of cling film and flatten them with a rolling pin to around 1cm thick. Slice the chicken into small, bite-sized chunks.
  2. Arrange the plain flour, beaten eggs and dried breadcrumbs on three individual plates. Season the flour, then dredge the chicken pieces in it. Next, dip them into the egg, and finally coat them thoroughly in the breadcrumbs.
  3. Transfer the breaded chicken pieces onto a baking sheet. Bake them in the oven for 10-12 mins.
  4. While the chicken cooks, melt the butter in a small saucepan. Add the finely chopped garlic and cook for 3-4 mins until softened. Reduce the heat, then whisk in the crème fraîche and the majority of the chopped parsley. Season the sauce. Pour it into a small pot for dipping, scatter the leftover parsley on top, and serve with mixed leaf salad and skinny fries if desired.
