Mini Quiches for a Crowd

Ingredients

  • 2 lbs small curd cottage cheese
  • 1/2 lb ricotta cheese
  • 6 tablespoons sour cream (Heaping)
  • 1 cup baking mix, such as bisquick
  • 6 eggs, beaten
  • 1/2 lb butter, melted
  • 1 lb swiss cheese, shredded (can choose to use other cheeses as well)

Method

  1. Preheat your oven to 350 degrees F.
  2. Lightly coat your mini muffin tins with cooking spray.
  3. Combine every listed ingredient in a very large mixing bowl.
  4. Alternatively, you can split the ingredients evenly and mix them in two separate large bowls.
  5. Transfer the quiche mixture to a pastry bag and pipe it into the prepared tins, filling them almost to the top. This makes approximately 96 mini quiches.
  6. Place the tins in the oven and bake for about 30 minutes.
  7. The quiches are ready to serve immediately, or you can freeze them for future occasions.
  8. To reheat frozen quiches, simply warm them in a microwave for 1-2 mins and serve straight away.
