Meze Fava Beans
This recipe prepares a classic Turkish meze featuring fresh fava beans. The beans are cooked with onion until tender, then simmered in a light sauce with lemon juice and sugar. Fresh dill is stirred in at the end for a fragrant finish. The dish is served cooled to room temperature, making it a perfect light lunch or side. It yields 12 servings and takes about 30 minutes to prepare.
Ingredients
- 3 tablespoons olive oil
- 0.5 onion, chopped
- 1.5 pounds fresh fava beans, shelled
- 2 tablespoons water
- 1 teaspoon all-purpose flour
- 1 cup boiling water
- 1 teaspoon lemon juice
- 0.5 teaspoon white sugar
- salt to taste
- 0.5 cup chopped fresh dill
Method
- Warm the olive oil in a skillet. Cook the chopped onion until aromatic, for about 1 minute. Add the shelled fava beans and cook them until they begin to soften, roughly 2 minutes.
- Combine the 2 tablespoons of water with the flour in a separate bowl, then pour this into the skillet. Pour in 1 cup of boiling water, along with the lemon juice, sugar, and salt. Cover the skillet and bring the contents to a boil. Lower the heat and let it simmer until the beans become very tender, approximately 5 minutes.
- Add the chopped fresh dill to the skillet and stir it through. Allow the mixture to simmer for another 2 minutes so the flavours meld. Remove from the heat and leave to cool completely before serving.
