Ingredients

  • 3 tablespoons olive oil
  • 0.5 onion, chopped
  • 1.5 pounds fresh fava beans, shelled
  • 2 tablespoons water
  • 1 teaspoon all-purpose flour
  • 1 cup boiling water
  • 1 teaspoon lemon juice
  • 0.5 teaspoon white sugar
  • salt to taste
  • 0.5 cup chopped fresh dill

Method

  1. Warm the olive oil in a skillet. Cook the chopped onion until aromatic, for about 1 minute. Add the shelled fava beans and cook them until they begin to soften, roughly 2 minutes.
  2. Combine the 2 tablespoons of water with the flour in a separate bowl, then pour this into the skillet. Pour in 1 cup of boiling water, along with the lemon juice, sugar, and salt. Cover the skillet and bring the contents to a boil. Lower the heat and let it simmer until the beans become very tender, approximately 5 minutes.
  3. Add the chopped fresh dill to the skillet and stir it through. Allow the mixture to simmer for another 2 minutes so the flavours meld. Remove from the heat and leave to cool completely before serving.
