These spicy fried potatoes make a fantastic side for a Tex-Mex dinner. Cubed potatoes are first boiled, then fried with onion, garlic, and a blend of warming spices until tender and coated. They are served with a cool soured cream for dipping, creating a delicious contrast of flavours and textures. This simple dish is ready to enjoy in just 35 minutes and serves four people.

Mexican Potatoes

Ingredients

  • 800g potato cut into cubes
  • 1 tbsp olive oil
  • 1 onion finely chopped
  • 1 garlic clove finely chopped
  • 1/2 tsp mild chilli powder
  • 1/2 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp cayenne pepper
  • soured cream to serve

Method

  1. Boil the potato cubes for 5 mins. While they cook, warm the olive oil in a frying pan and gently cook the chopped onion for 8 mins. Stir in the garlic and all the spices, then fry for another 2 mins.
  2. Drain the potatoes and add them to the pan with the onion mixture. Increase the heat and toss the potatoes to coat them evenly. Continue cooking for 10 mins until the potatoes are tender. Serve with soured cream and a light dusting of cayenne pepper.
