Mexican Potato Wedges
These Mexican potato wedges offer a flavourful and speedy snack or light meal. A baking potato is cut into wedges, seasoned with mild chilli powder, and microwaved until tender. Ingredients
- 1medium-sized baking potato
- mild chilli powder or paprika
- half a 400g can mixed pulses
- 1 garlic clove chopped
- 1 tbsp low-fat soft cheese
Method
- 1. Slice the potato into 4 wedges. Dust them with mild chilli powder and cook in the microwave on High for about 5 mins until tender. 2. While the potatoes cook, combine the mixed pulses with additional spice powder and the chopped garlic clove, then microwave on High for 2 mins to heat. 3. Arrange the cooked potato wedges on a plate, spoon the warm pulse mixture over the top, and serve with the low-fat soft cheese.
