This vibrant Mexican chicken dish is packed with zingy flavours. Chicken breasts are coated in a marinade of olive oil, crushed coriander seeds, lime zest, paprika and muscovado sugar. After marinating, they are roasted with lime slices, unpeeled garlic cloves and fresh red chillies. The result is a succulent and aromatic main course, perfect served with a fresh salad and salsa.

Mexican Lime Chicken

Ingredients

  • 2 chicken breasts
  • 2 tbsp olive oil
  • 1 tsp crushed coriander seeds
  • 1 tsp grated lime zest
  • 1/2 tsp paprika
  • 1/2 tsp muscovado sugar
  • 1 lime
  • 6 unpeeled garlic cloves
  • 2 fresh red chillies

Method

  1. Combine the olive oil with the crushed coriander seeds, grated lime zest, paprika and light muscovado sugar.
  2. Place the chicken breasts into a baking dish and spoon the prepared marinade over them. Squeeze a little juice from the lime over the top, then cover the dish and leave to marinate for 30 minutes.
  3. Gently slide a couple of lime slices underneath the skin of each chicken breast and season. Arrange the unpeeled garlic cloves and fresh red chillies around the chicken in the dish.
  4. Roast the chicken in the baking dish, without a cover, for 30-35 minutes in an oven preheated to 190C/gas 5/fan oven 170C. You can test if it is cooked by pressing the chicken with your finger. if it feels soft, it needs a little more time.
  5. Serve the finished chicken accompanied by salad and salsa.
