Mexican Chilli Chicken
This Mexican chilli chicken features chicken breasts cooked in a rich sauce made from roasted tomatoes, bell peppers, garlic, chillies and onions. The vegetables are first roasted in the oven, then blended to create a thick, smooth base for the chicken. The dish is finished with fresh coriander for a vibrant garnish. It serves four people and takes about 40 minutes to prepare and cook.
Ingredients
- 908 g tomatoes
- 6 bell peppers
- 7 garlic cloves
- 2 chilies
- 2 onions
- 4 chicken breasts
- coriander
Method
- Set your oven to 200°C. Arrange all the vegetables in a roasting tray and dry roast them for around 20 minutes, until the peppers begin to colour.
- Move the roasted vegetables to a blender and blend them until you have a thick, smooth purée. Transfer this purée to a saucepan, add the chicken breasts, and cook for approximately 10-15 minutes until the chicken is thoroughly heated.
- Finish the dish by scattering over the chopped coriander just before you serve it.
