Mexican Chilli Chicken

This Mexican chilli chicken features chicken breasts cooked in a rich sauce made from roasted tomatoes, bell peppers, garlic, chillies and onions. The vegetables are first roasted in the oven, then blended to create a thick, smooth base for the chicken. The dish is finished with fresh coriander for a vibrant garnish. It serves four people and takes about 40 minutes to prepare and cook.

Ingredients

  • 908 g tomatoes
  • 6 bell peppers
  • 7 garlic cloves
  • 2 chilies
  • 2 onions
  • 4 chicken breasts
  • coriander

Method

  1. Set your oven to 200°C. Arrange all the vegetables in a roasting tray and dry roast them for around 20 minutes, until the peppers begin to colour.
  2. Move the roasted vegetables to a blender and blend them until you have a thick, smooth purée. Transfer this purée to a saucepan, add the chicken breasts, and cook for approximately 10-15 minutes until the chicken is thoroughly heated.
  3. Finish the dish by scattering over the chopped coriander just before you serve it.
