Marinated Lamb Steaks in Flatbread

Ingredients

  • 600g boneless lamb steaks
  • juice 1 lemon
  • 1 cucumber
  • 200ml low fat natural yogurt
  • 4plain naan bread

Method

  1. Get the barbecue ready. Place the lamb steaks into a bowl, season generously with salt and pepper, then add half of the lemon juice. Combine thoroughly and allow to marinate for 10 minutes.
  2. While that marinates, peel the cucumber and slice it in half lengthways. Use a teaspoon to scoop out the seeds. Chop the cucumber into rough pieces and combine it with the rest of the lemon juice and half of the yogurt. Put this mixture to one side.
  3. Add the remaining yogurt to the lamb and mix it in. Place the lamb onto the barbecue grill and cook for 5 minutes. the underside should appear quite dark from the cooking yogurt. Flip the lamb over and cook for another 5 minutes. Transfer to a board to rest while you warm the naan bread on the barbecue. Slice the lamb into strips about the thickness of a pencil, then cut each naan in half. Fill the bread with the cucumber sauce and add the sliced lamb along with any resting juices.
