Marinated Fig & Mozzarella Salad
This fresh salad combines sweet figs with a tangy marinade of balsamic vinegar, lemon juice, and olive oil. After marinating, the figs are served with sliced mozzarella, fresh thyme, mint, and salad leaves. It is a simple yet elegant dish that works beautifully as an appetiser or a light main course, ready in about 40 minutes.
Ingredients
- 8 figs, stalks trimmed
- 4 tablespoons balsamic vinegar
- 2 tablespoons extra virgin olive oil, plus extra for drizzling
- 1 lemon, finely grated zest and juice
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon mint leaf, chopped
- 10 ounces mozzarella cheese
- 2 ounces salad leaves
- salt and pepper
Method
- Slice each fig lengthwise into four pieces. Combine the balsamic vinegar, olive oil, and lemon juice in a bowl, whisking with salt and pepper to create the marinade.
- Place the fig wedges upright in the centre of a large, shallow serving dish, arranging them tightly together.
- Sprinkle the lemon zest and chopped thyme over the figs, then pour the prepared marinade over them. Allow this to sit at room temperature for 30 minutes.
- Chop the mint leaves. Drain the mozzarella and slice it, then mix with half of the chopped mint and season with salt and pepper.
- For serving, place the mozzarella and mint mixture around the marinated figs. Add lightly torn salad leaves and the rest of the mint, finishing with a drizzle of olive oil.
