Maple-glazed hot dogs with mustardy onions
This American main course offers a delicious homemade twist on a classic. Juicy pork sausages are roasted, then glazed with maple syrup for a sticky finish. They are paired with golden fried onions flavoured with mustard seeds, Dijon mustard, and a touch of vinegar. Everything is served in warm part-baked baguettes for a satisfying and flavourful dinner for four.
Ingredients
- 8 good-quality pork sausages
- 2 tbsp sunflower oil
- 2 onions thinly sliced
- 1 tsp yellow or black mustard seeds
- 2 tbsp maple syrup
- 4 part-baked mini baguettes (or cut a French stick into 4 pieces)
- 1 tbsp Dijon mustard
- large pinch brown or muscovado sugar
- 2 tsp wine or cider vinegar
Method
- Set your oven to 200C/180C fan/gas 6. Arrange the sausages on a non-stick baking tray and roast them for 20 mins. While they cook, warm the oil in a frying pan and fry the onions with the mustard seeds for 10-15 mins until they are soft and golden.
- Take the sausages out and coat them with the maple syrup. Place the baguettes on the same tray. Turn the oven up to 220C/200C fan/gas 7 and put the tray back in for 5-8 mins until the sausages are dark, glossy and fully cooked. Mix the mustard, sugar and vinegar into the onions, stirring until the sugar dissolves. Slice the baguettes open along the top, add two sausages to each, and top with the mustardy onions before serving.
