Mango Pisco Sour
This vibrant Latin American cocktail offers a perfect balance of sweet and sour flavours. It begins with a homemade mango and ginger syrup, which is then shaken with Pisco, fresh lime juice and egg white. The result is a creamy, refreshing drink finished with a dash of aromatic bitters. Ideal for sharing, it makes four servings and comes together in about 20 minutes.
Ingredients
- 300g mango pieces
- 100g granulated sugar
- a thin slice root ginger
- juice 3 limes
- 200ml Pisco
- 1 egg white
- bitters to finish
Method
- Place the mango pieces, 100g granulated sugar and a slice of root ginger into a medium saucepan with 100ml water. Stir the mixture and bring it to a simmer for 7-8 mins until the fruit softens. Remove from the heat and let it cool for 10-15 mins.
- Strain the cooled mango syrup through a sieve into a cocktail shaker. Pour in the juice of 3 limes, 200ml Pisco and one egg white. Fill the shaker to the top with ice, shake it vigorously, then strain the contents into four tumblers. Finish each glass with a couple of shakes of bitters before serving.
