Mango, Chilli & Tequila Ice Lollies
These sophisticated frozen treats combine sweet mango with a kick of chilli and a splash of tequila. The mixture is blended until smooth, frozen in moulds, and finished with a dusting of extra chilli powder for a fiery contrast to the cold, fruity base. They are an ideal make-ahead dessert for a summer gathering.
Ingredients
- 3-4 small ripe mangoes stoned and peeled (you need 500g mango flesh)
- juice and zest 2 limes
- 140g golden caster sugar
- 1/4 tsp hot chilli powder plus extra to serve
- 50ml tequila
Method
- Place the mango flesh into a blender and blitz until completely smooth. Pass this purée through a fine sieve. Stir in the lime juice, zest, sugar, 1/4 tsp hot chilli powder and tequila, mixing thoroughly until you have a uniform liquid.
- Pour the blended mixture into the 10 sections of an ice lolly mould. Transfer the mould to the freezer and leave for 30-45 mins until it begins to set. Push the lolly sticks into place and freeze for at least 4 hrs until completely solid.
- Briefly submerge the mould in hot water for a few seconds to loosen the lollies, then gently pull them out. For serving, dust a little extra chilli powder over each ice lolly.
