Manchego and Chorizo Melting Biscuits
These savoury biscuits combine grated manchego and finely chopped chorizo with a spiced dough for a crisp, moreish snack. The dough is shaped into a log, chilled, then sliced and baked until golden. Ideal for serving alongside cheese or packaging as an edible festive gift. The recipe yields approximately 30 biscuits.
Ingredients
- 125g plain flour
- 1/2 tsp sweet smoked paprika
- 1 tsp fennel seeds crushed
- 100g cold salted butter cubed
- 100g manchego grated
- 80g chorizo very finely chopped
Method
- Combine the plain flour, sweet smoked paprika and crushed fennel seeds in a food processor. Add the cubed cold salted butter and pulse the mixture until it looks like fine breadcrumbs. Mix in the grated manchego and very finely chopped chorizo, then process until it comes together into a dough. Shape this dough into a log roughly 4cm in diameter, wrap it in baking parchment and place it in the freezer to chill for 30-40 mins until firm.
- Preheat your oven to 180C/160C fan/gas 4. Take the chilled dough log, unwrap it and cut it into slices about 5mm thick. Arrange these biscuit slices on a lined baking sheet, ensuring they have plenty of space between them as they will spread during baking. Bake for 15-20 mins until they turn a golden colour. Allow them to cool completely on the sheet. They can be stored in an airtight container for up to three days.
