Low Carb Shrimp Salad with Aioli Mayonnaise

Ingredients

  • 1 lb medium shrimp
  • 1/4 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tablespoon finely chopped garlic
  • 1 tablespoon parsley
  • 1 teaspoon lemon juice
  • 1/4 cup chopped red pepper
  • 1/4 cup chopped cucumber
  • 1/4 cup chopped onion
  • 1/4 cup chopped tomato
  • 1/2 teaspoon Old Bay Seasoning (optional)

Method

  1. Cook the shrimp by steaming or boiling until they turn pink, then immediately transfer them to a bowl of ice water to cool.
  2. Prepare the aioli mayonnaise by combining the sour cream, mayonnaise, chopped garlic, parsley and lemon juice in a separate bowl.
  3. Place the cooled shrimp and all the chopped vegetables into a medium mixing bowl and toss them together.
  4. Pour in the prepared aioli mayonnaise, using just enough to coat and bind the salad ingredients.
  5. Season the mixture with seasoning salt according to your preference.
  6. If using, stir in the optional Old Bay Seasoning. Refrigerate the salad before serving.
