Low Carb Shrimp Salad with Aioli Mayonnaise
This light and satisfying salad combines tender shrimp with a mix of fresh, crunchy vegetables. The dish is brought together with a rich, garlicky aioli mayonnaise made from scratch. It's a perfect low-carb option that comes together quickly, ideal for a speedy lunch or a simple dinner. You can customise the seasoning with optional Old Bay for an extra flavour boost.
Ingredients
- 1 lb medium shrimp
- 1/4 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon finely chopped garlic
- 1 tablespoon parsley
- 1 teaspoon lemon juice
- 1/4 cup chopped red pepper
- 1/4 cup chopped cucumber
- 1/4 cup chopped onion
- 1/4 cup chopped tomato
- 1/2 teaspoon Old Bay Seasoning (optional)

Method
- Cook the shrimp by steaming or boiling until they turn pink, then immediately transfer them to a bowl of ice water to cool.
- Prepare the aioli mayonnaise by combining the sour cream, mayonnaise, chopped garlic, parsley and lemon juice in a separate bowl.
- Place the cooled shrimp and all the chopped vegetables into a medium mixing bowl and toss them together.
- Pour in the prepared aioli mayonnaise, using just enough to coat and bind the salad ingredients.
- Season the mixture with seasoning salt according to your preference.
- If using, stir in the optional Old Bay Seasoning. Refrigerate the salad before serving.
