Lokshen Pudding
This Lokshen pudding is a classic Jewish dessert, ideal for Shabbat. It features vermicelli noodles baked in a sweet, spiced custard enriched with melted butter, sultanas, and fresh citrus zest. The result is a comforting, golden-topped bake. It serves six people and takes about 50 minutes to prepare and cook. For an extra treat, it can be accompanied by cream and a fruit compote.
Ingredients
- 200g unsalted butter melted
- 500g pack broken vermicelli or crush 500g vermicelli
- 100g golden caster sugar
- 60g sultanas
- 1 lemon zested
- 1 orange zested
- 2 eggs beaten
- 11/2 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp mixed spice
- grating of nutmeg
- cream and fruit compote, to serve (optional)
Method
- Set your oven to 210C/190C fan/ gas 6½. Use 1 tbsp of the melted butter to grease a 16 x 26cm ovenproof dish. Boil the vermicelli in a large pan of water as per the pack instructions, which should take roughly 3-4 mins. Drain the noodles and place them in a large mixing bowl. Combine with the remaining melted butter, then mix in the sugar, sultanas, all the citrus zest, the beaten eggs and the spices until everything is well incorporated.
- Pour the combined mixture into the buttered dish, spreading it evenly to cover the base. Place in the oven and bake for 30 mins until the surface turns a golden colour. Allow the pudding to cool for 10 mins before serving. It can be enjoyed with cream and fruit compote if desired.
