Little Gems With Blue Cheese Dressing
This elegant salad pairs crisp wedges of Little Gem lettuce with a rich and tangy homemade blue cheese dressing. The creamy dressing, made with Stilton or Danish Blue, is whisked together with vinegar, cream and a touch of oil. Finished with a scattering of sliced green onions, it's a sophisticated yet simple dish that comes together in mere minutes. It's an impressive option for entertaining or a quick, flavourful side.
Ingredients
- 2 tablespoons cider vinegar or 2 tablespoons white wine vinegar
- 2 tablespoons double cream
- 3 1/2 ounces olive oil
- 2 ounces Stilton cheese or 2 ounces other blue cheese (I used Danish Blue)
- 2 little gem lettuce (I have done it with sliced romaine as well with very good results)
- 2 green onions, finely sliced
- 1 tablespoon sugar or 1 tablespoon sugar substitute (the recipe did not call for this, it is my preference, but I found it added a lovely flavour to the)
- salt and pepper
Method
- Prepare the dressing by whisking together the vinegar, cream, a little seasoning, and the sugar, then slowly whisk in the oil before crumbling the cheese into the mixture.
- Slice the lettuces lengthways into wedges and arrange them on a serving plate.
- Pour the dressing over the lettuce wedges and finish by scattering the finely sliced green onions on top.
