Lithuanian Kugelis

Ingredients

  • 1 pound bacon, diced
  • 2 large onions, diced
  • 0.5 cup butter
  • 5 pounds russet potatoes, peeled and shredded
  • 1 (12 fluid ounce) can evaporated milk
  • 6 eggs

Method

  1. Set your oven to 350 degrees F (175 degrees C) to preheat.
  2. Put the diced bacon into a Dutch oven and cook it, covered. Once the bacon softens and releases its fat, add the diced onions. Cook until the onions are soft and clear. Uncover the pot and keep cooking until the contents turn a deep, golden brown and caramelise.
  3. Take the pot off the heat and mix in the butter until it has melted. Stir the shredded potatoes into the onion and bacon mixture. Pour in the evaporated milk and add the eggs, then mix everything thoroughly. Transfer this mixture into a 9x13-inch baking dish.
  4. Place the dish in your preheated oven and bake for about 1 hour, until the top is golden and the mixture is bubbly. Should the top colour too fast, cover it with foil. After baking, let it stand for 10 minutes. Slice it into 3x3-inch squares and serve while hot.
