Lightly Spiced Christmas Stuffing
This flavourful British stuffing is a wonderful side dish for any occasion. It combines sausagemeat with breadcrumbs, onion, garlic, celery, apples and walnuts, all lightly seasoned with curry powder and lemon. A portion is reserved for stuffing a turkey, while the rest is shaped and wrapped in streaky bacon for roasting. It serves 10 people and takes about 120 minutes to prepare and cook.
Ingredients
- 200g white bread (about 5 thick slices, crusts included)
- 1 large onion quartered
- 2 garlic cloves
- large handful of parsley
- 450g good quality sausagemeat
- 2 Cox's apples cored, peeled and finely chopped
- 3 celery sticks, strings removed and diced
- 100g/4oz pack walnut pieces, chopped
- 1 tsp curry powder
- 1 large egg
- grated zest of 1 lemon and juice of 1⁄2 lemon
- 20 rashers rindless streaky bacon
Method
- Process the bread in a food processor to create crumbs, then transfer them to a large mixing bowl. Place the onion, garlic and parsley into the processor and blend until finely chopped. Combine this onion mixture with the breadcrumbs, then add all remaining ingredients except the bacon. Season well and use your hands to mix everything together thoroughly.
- Reserve roughly one third of the stuffing mixture for use in a turkey. Shape the remaining mixture into 20 equal pieces. Form each piece into a small sausage shape, then wrap each one with a single rasher of bacon. Arrange the wrapped sausages in a shallow ovenproof dish, prepared for roasting as directed in the accompanying turkey recipe.
