Lentil Soup
This hearty lentil soup is wonderfully straightforward to prepare. Brown lentils are simmered with a rich broth base, then combined with diced carrots, potatoes, and red bell pepper. Ingredients
- 10 cups water
- 6 chicken bouillon cubes
- 1 1/2 cups brown lentils
- 3 carrots, diced
- 2 potatoes, peeled and diced
- 1 red bell pepper, seeded and diced
- 1 1/2 tablespoons cumin
Method
- Place the lentils, bouillon cubes, and water into a large soup pot and bring the mixture to a boil.
- Lower the heat and allow the soup to simmer gently for 25 minutes.
- Stir in the diced carrots, potatoes, red bell pepper, and cumin.
- Continue cooking for another 25 minutes, or until all the vegetables have softened.
- Ladle the finished soup into bowls and serve immediately.
