Lemon and Rosemary Halloumi Skewers
These vegetarian skewers offer a bright and flavourful side dish. Halloumi cheese is marinated with fresh rosemary and zesty lemon, then threaded with chunks of red onion, courgette and lemon wedges. They are quickly barbecued until golden. This recipe serves four people and can be prepared in just 15 minutes.
Ingredients
- 2 tbsp olive oil
- 1 sprig rosemary chopped
- 1 large lemon halved lengthways
- 250g pack halloumi cheese cut into large chunks
- 1 small red onion cut into 8 wedges
- 1 courgette cut into 8 chunks
Method
- Combine the olive oil and chopped rosemary in a bowl that is not metallic. Grate the zest and squeeze the juice from half of the lemon, adding both to the bowl. Season as desired. Add the halloumi chunks and stir to coat them in the marinade. Cover the bowl and let it sit for 15 mins.
- Slice the remaining lemon half into four wedges, then halve each wedge. Take the halloumi from the marinade. Thread the cheese onto metal skewers alternately with the red onion wedges, lemon pieces and courgette chunks. Cook on a barbecue for 5-10 mins, turning them now and then and brushing with any remaining marinade. Serve alongside houmous and couscous.
