Lemon Pepper Shrimp Scampi
This dish combines succulent jumbo shrimp with a vibrant lemon pepper and garlic sauce. The shrimp are sautéed in butter and served atop a simple, herbed orzo pasta. It's a straightforward yet impressive meal that delivers bright, fresh flavours and comes together in about half an hour, making it perfect for a speedy weeknight dinner.
Ingredients
- 1 cup uncooked orzo pasta
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt, divided
- 7 teaspoons unsalted butter, divided
- 1 1/2 lbs peeled and deveined jumbo shrimp
- 2 teaspoons bottled minced garlic
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon fresh lemon juice
- 1/4 teaspoon black pepper
Method
- Prepare the orzo pasta following the packet instructions, but do not add any salt or fat. Once drained, transfer it to a medium bowl. Mix in the chopped parsley and 1/4 teaspoon of the salt, then cover the bowl to keep the pasta warm.
- As the orzo cooks, place a large non-stick skillet on the heat and melt 1 tablespoon of the butter. Season the shrimp with the remaining 1/4 teaspoon of salt. Cook half of the shrimp in the pan for 2 minutes, or until they are nearly cooked through, then move them to a plate. Melt 1 teaspoon of butter in the same pan and cook the remaining shrimp for 2 minutes, transferring them to the plate afterwards.
- Melt the final tablespoon of butter in the skillet. Add the minced garlic and cook it for 30 seconds, stirring the whole time. Return the cooked shrimp to the pan, along with the fresh lemon juice and black pepper. Cook everything together for 1 minute, or until the shrimp are fully done.
- To serve, spread the warm orzo onto a large platter. Spoon the cooked shrimp and all of the pan sauce over the top of the pasta.
