Lemon French Toast with Poached Plums

Ingredients

  • 2 eggs beaten
  • 100ml milk
  • zest 1 lemon
  • 4 tbsp caster sugar
  • 4 slices bread or brioche, cut in half diagonally
  • 50g butter
  • 450g plums halved and stoned
  • 1 tbsp lemon juice
  • crème fraîche or vanilla ice cream, to serve

Method

  1. In a shallow dish, combine the beaten eggs, milk, lemon zest and 1 tbsp of the caster sugar. Place the bread slices into the mixture, turning them to ensure they are fully coated and have absorbed the liquid.
  2. Place 2 tbsp sugar and 25g butter into a frying pan. Warm the pan until the sugar dissolves. Add the halved plums and cook for about 5 mins until they soften and their juices turn a golden brown colour. Stir in the lemon juice and warm through to create a light syrup.
  3. Melt the rest of the butter in a large non-stick frying pan. Fry the soaked bread slices until each side is golden brown. Arrange two slices per plate, dust with the remaining 1 tbsp sugar, and top with the warm plums and their syrupy juices. Enjoy plain or with a side of crème fraîche or vanilla ice cream.
