Lemon French Toast with Poached Plums
This French-inspired dish combines classic French toast infused with lemon zest and a quick compote of plums cooked in a buttery syrup. It uses simple ingredients for a luxurious result, ideal for a weekend treat. Serve it warm, perhaps with a dollop of crème fraîche, for a delightful start to the day. The recipe serves four people and can be prepared in about half an hour.
Ingredients
- 2 eggs beaten
- 100ml milk
- zest 1 lemon
- 4 tbsp caster sugar
- 4 slices bread or brioche, cut in half diagonally
- 50g butter
- 450g plums halved and stoned
- 1 tbsp lemon juice
- crème fraîche or vanilla ice cream, to serve
Method
- In a shallow dish, combine the beaten eggs, milk, lemon zest and 1 tbsp of the caster sugar. Place the bread slices into the mixture, turning them to ensure they are fully coated and have absorbed the liquid.
- Place 2 tbsp sugar and 25g butter into a frying pan. Warm the pan until the sugar dissolves. Add the halved plums and cook for about 5 mins until they soften and their juices turn a golden brown colour. Stir in the lemon juice and warm through to create a light syrup.
- Melt the rest of the butter in a large non-stick frying pan. Fry the soaked bread slices until each side is golden brown. Arrange two slices per plate, dust with the remaining 1 tbsp sugar, and top with the warm plums and their syrupy juices. Enjoy plain or with a side of crème fraîche or vanilla ice cream.
